Getting caught up

Hi guys!  We got about 1/2 an inch of ice (yes, seriously) last night and about a foot of snow today.  Our power has been flickering on and off all day long.  For now we’ve had power for a little while and *fingerscrossed* it stays on.  Needless to say due to the power outage, I’m behind in posts.  I promise that I’ll try to get everything back to normal tomorrow and get my posts up and ready!

So being in bed today was very nice and relaxing.  Rocky feels much better and the extra downtime was good for him.  We were supposed to get some pretty heavy winter weather today starting in the late morning and continuing on through the rest of the day.  However, the snow didn’t really start until about 4ish, right before we had to leave for MT class.  We headed out but had to turn around and come back home.  The roads were so bad.  Cars sliding everywhere and since it was heading into rush hour, some pretty nasty traffic as well.

Once we got back home I turned the electric blanket on the bed back on and got into my jammies!  Then I started heating up dinner.  While dinner heated, I munched on:

Four FoodShouldTasteGood buffalo chips.  I was hungry and wanted something to help calm angry belly.

The very last of the leftover veggie chili from the freezer.  Perfect for this cold…

Last night we got back a tad late from SF class.  After I changed into my jammies and got ready for bed, it was already 10pm.  I decided to just stay upstairs and read in bed for a bit.  I was freezing cold!  I was cold at class and then we stood outside for a few minutes talking which made me even colder.  My feet were frozen solid by the time I got in bed.  Sadly I never really warmed up even with the heating blanket on.  I was pretty chilly most of the night.

I got up this morning to more cold and more snow. *sigh*  Probably a good 1.5-2 inches of the white stuff.  Since I was cold (and made even more cold due to taking Rocky out) I decided on some oats.  Super basic ones today with 1 tsp of ground flax added and mix-ins being cranberries and dark chocolate PB.

TT: Spice up your eggs!

That mustard you see right there always goes in to any egg dish I’m making.  I love this mustard so much that I go through tons of it (I did a review of it!).  If I’m making a quiche, or fritatta, or even just scrambled eggs, I add in a spoonful of mustard.  It gives the eggs a nice background flavor that isn’t overpowering, but enough to turn ordinary eggs into something a little more ooo la la.

When making scrambled eggs, I break the yolks up and get a small scramble started.  Then I add in the mustard and continue to beat the eggs until everything is incorporated.  It takes a minute or two to get the mustard distributed throughout the eggs, but it will happen.  And it makes the eggs all the better for it.

You can see the flecks from the grainy mustard all through the scrambled eggs.  So yummy!  Experiment with different mustards and see what…

Dinner tonight was leftovers and something new for me.  This:

Tofu.  I am determined to try and see if I can like it.  Especially since I’m sort of leaning more away from meat in general.  As of right now it just doesn’t hold an appeal to me.  I had a small bite of leftover chicken and I was just, “meh” about it.  I in no way shape or form think I’ll give it up entirely because I do like it!  Just now in small doses.

Anyway, I bought some extra firm tofu and pressed the hell out of it for an hour.  Then I made a marinade out of:

  • Teriyaki sauce
  • Olive oil
  • Mustard
  • S&P
  • Garlic Powder
  • Chili Powder
  • Red pepper flakes

I sliced the tofu thin and it sat in the marinade for about 1/2 an hour.  Then I baked it at 400 for about 1/2 an hour, flipping once.  It resulted in this:

Nicely browned, firm to the touch, and crispy tofu.

Hi guys!  Last night while Scott and I watched The Naked City we munched on these.

Along with 2 more wee glasses of wine.  I had some of the dark chocolate chips and four of the crack squares.  One thing I love about old movies is how very non-PC and dated the sayings and expressions are.  Today I doubt that a male coworker could get away with freely saying how a female coworker needs a good spanking.  It’s funny now but scary that that actually used to be the way of the world.

After the movie I went straight to bed.  I was wiped out.  Rocky decided he wanted to get up before 6am today and I told him he had to go back to bed.  I was sleeping in.  He did and I was able to sleep in till 7:30, wooo!

I checked the weather quick before taking him outside and saw that we are supposed to get more snow. Meh.  I’m…

So I found these pics of things I ate yesterday that I totally forgot to post!  Shame on me!

Starting off, in my breakfast pic yesterday, there is a peppermint bark next to my bowl that I forgot to mention.  I didn’t eat it though, the granola + yogurt was enough.

During the afternoon before Scott napped and I read, we both were snacky.

I had a green apple + PB and some dried plums (which are really prunes. Do they stop using the word prune thinking people won’t eat them?).  I ate everything.  Let me preface this by saying that my body does not handle concentrated doses of fiber very well.  Those Fiber 1 granola bars?  Not good.  High fiber cereal? Not good.  So as I was eating all 5 of those plums, I thought to myself, “I wonder if this is too much fiber for me to handle?”

Hi guys!  First some happy things!

1. Friday wasn’t a total drag, we did get some good news! The insurance adjuster finally came out to look at our roof. He agreed it was damaged and that we needed a new one, so our request was approved.  Hooray!  New roof here we come!

2. Meghann is running in her first marathon!  And she is also raising money for a great charity.  Just by visiting her page, you’ll help contribute.  Please swing by and see all that she has going on!

3. Wine. I love wine with my hunnies.

4. Sunday night supper. I love when I get to roast something in the oven.  Sunday night dinner usually means wine with my hunnies (refer to point #3) and jazz on the radio.  Our current love is music from the 40s and earlier. We listened to some of that while dinner was roasting in the oven.

Hi guys!  As I’m typing this it’s currently snowing (again) outside.  It is coming in like a whirlwind too!  It’s only been snowing for about an hour and a half and we already have over 2 inches of snow.  Oh my!

I had a glorious 9 hour sleep.  mmm  Just what I needed.  Rocky got me up at 7:30 this morning and it was chilly out!  I checked the weather and it said current temp was 9F RealFeel 13F.  I got Rocky taken care of and then plopped down with some breakfast.

2% Fage with some homemade chocolate granola and some cranberries.  Plus morning coffee which was peppermint!  Whee!  I literally inhaled breakfast because I wanted to get started on my run!

Oh it was so nice to be out and running.  I feel like Friday’s crap run was ages ago and I was ready to strut my stuff.  I thought about doing some speed work but changed my mind.  I just wanted…

Cheddar Beer Bread

Cheddar Beer Bread

I have seen people here and there talk about beer bread but that’s about as far as I went in giving it any attention.  Then over the holidays I saw it pop up again and thought, “Hell Yes!  Beer Bread!”

New Years at OHC HQ means sauerkraut and some sort of pork dish.  I wanted to make the beer bread to go with that meal but then I forgot.  And when I remembered about dear old beer bread we were past the holiday.  I still wanted to make it though and started doing some research.

Most of what I found was pretty basic.  Beer, flour, and some baking powder.  Well that’s lovely but can’t we pump this up a little bit.  Where’s the seasonings and extra kick?  I decided to try my hand at making some beer bread with some umph!
